Chicken casserole
This recipe for cazuela de ave (chicken casserole) is a simple traditional Chilean recipe, passed down by the indigenous Araucani throughout all of Patagonia, finally reaching Tierra del Fuego. The ingredients for 4/6 people are: a chicken, an onion, a carrot, two potatoes, a cup of rice, a cup of finely chopped beans, an egg, a stalk of celery with leaves, a bunch of parsley, oregano and olive oil.
Cut the chicken into pieces and brown in a pan with lots of oil. Add the onion cut into quarters, the carrot cut into rounds, chopped parsley, the celery and oregano. When the meat starts to brown add three liters of water, then wait until it is half cooked and add the raw potatoes, beans and rice. Add salt and pepper and boil for long a while. Then remove from heat and add the beaten egg to bind it all.
